If you like to go out and eat, here is a way to eat at home and have a more healthy dinner. At least you made it and you know what the ingredients were. This is a great dinner or lunch!
Fresh Made Steak or Chicken Open Face Burrito Plates or Bowls

(This is an awesome way to marinate meats or veggies, quickly).
- 4 3-ounce steaks, boneless any cut sliced and cubed or
- 4 chicken breasts – sliced and cubed
- 5 cups fresh romaine lettuce, washed and chopped into small pieces
- 1 package Mexican blend cheese, shredded
- ½ cup sour cream (optional) Daisy brand is Gluten Free
- ½ cup thin sliced sweet onions
- ½ cup thin sliced green bell peppers
- ½ cup thin sliced red bell peppers
- ½ cup chopped tomatoes
- 1 cup black beans-rinsed (canned)
- ½ cup yellow corn (fresh or canned)
- 4-cups washed/rinsed basmati rice – See preparations below
- Lime Cilantro Quick Marinade – See preparations below
- 8-10 Uncooked Tortillas (from Costco – I like these, Tortilla Land)
Lime Cilantro Quick Marinade
- 1 cup cilantro, lightly chopped
- Juice from 1 lime
- ¼ cup olive oil
- 3 cloves of garlic
- 1 jalapeno lightly chopped (for un-spicy remove the seed)
- 1 teaspoon kosher salt
- ½ teaspoon fine pepper
Combine all the ingredients in a food processor for about one minute or until the texture is nice and thin. The garlic should be fully processed. You can make the marinade by dicing the cilantro, jalapenos and garlic very lightly and then mix the ingredients in a bowl with a fork if you don’t have a food processor. If you don’t want a really hot and spicy marinade, remove seeds of the jalapeno and wash it under cold water. You can store this marinade in the fridge up to 3-4 days.
Mix in a large bowl your chicken or steak and the marinating mixture, making sure the meat is well covered. Place meat into the small utility bowl, pour the remaining marinates from the mixing bowl into the utility bowl. Then place the marinating cover on the bowl and pump out all the air. Leave this for about 1 hour.
Rice – Platinum 4 Quart Pan w/Cover
4-cups rinsed rice
½ cup chopped cilantro
½ juiced lemon (or both half’s – to taste)
Place 6 cups of water in the 4 quart and add the rinsed rice. Place pan on medium heat and when the temperature gauge reaches 80 Celsius, turn off and let sit on heating element. Rice will finish cooking in 10-15 minutes. Perfect! The cilantro and lemon juice can be added now by mixing into the rice or added just before you serve it. If you want to, after the rice had finished cooking, slice some butter and place on top of the rice and let melt. Cover.
Grilling the Marinated Meat and Grilling the other ingredients – Platinum Grill Pan
After the steak or chicken has marinated, place the Platinum Grill Pan covered on medium heat. When the temperature reads 60 Celsius, remove cover and place your marinated meat in the grill pan to cook. Stir for about 5 minutes or until meat is done and place meat in a glass bowl / cover to keep warm.
Keeping the heat on grill pan, place the sweet onions, red and green bell peppers, black beans and corn into the grill pan and sauté for about 5-7 minutes. Making sure the veggies are cooked. Place into a serving bowl and cover to keep warm.
Keeping the Grill Pan Hot, place 1 uncooked tortilla in the grill pan and cook for 1 minute each side (flavor from the pan will cook into the tortilla…yummmm). Remove and place on a plate. Repeat until everyone has a cooked tortilla on a plate. Place the lemon cilantro rice on a cooked tortilla, spoon veggies on the rice and place your grill meat on top of the veggies then add the cheese. If you want to, you could add slices of avocados to each plate. Top with sour cream and then add a few corn chips to each place and there you have it. You made it and it will taste better than that famous Mexican restaurant. This is a meal in its self but, if you wish, you could have your favorite green salad with this meal.
If you want to make this gluten free, don’t use the tortillas and make it into a Bowl dinner.
