The Perfect Veggie Burger! There are a few things I look for in a veggie burger, they are: * The burger must be structurally sound * The flavor must be better than just good * The burger must hold together while cooking and * The burger must be soft and tender and act like a burger Well, here it is. Lucinda has out done herself. This is the best veggie burger ever. Give it a try The Real Deal Veggie Burger Healthy Solutions               Makes 14 burgers Featured Platinum Cookware:  The Large Skillet and  Platinum Grill Pan Mix up 2 flax eggs (2 Tbs. ground flax seed + 6 Tbs. water) in a small bowl and set aside for at least 10 minutes while you prepare the rest of the ingredients. 1 can black beans, drained and roughly mashed with a fork or other mashing tool 1 small  sweet onion, diced 1/2 large red bell pepper, diced 1 8 oz package fresh mushrooms, diced 1 large clove garlic, minced 2 medium carrots, finely grated 1 cup oat flour* 1/2 cup almond flour* 2 tsp Mexican Seasoning blend In Platinum large skillet on medium heat, sauté the onions, red bell pepper, mushrooms and garlic until veggies are soft.  If the veggies have too much moisture place the lid on an angle to allow some air flow .  Place all ingredients in order listed into a large mixing bowl and stir very well so that the spices are evenly distributed.  Add the flax eggs and mix very well. Veggie Potato Boats

Veggie Potato Boats Healthy Solutions Serves:  A Lot Featured Platinum Cookware: 12 Quart and Large Skillet This is a fun meal to prepare with your children.  Your imagination is all that is needed.  You pick what ingredients you place in the boats. To start, take the Platinum 12 Quart Roaster with cover and place 22-23 medium potatoes in the roaster (washed and scrubbed) and place ¼ cup water in with the potatoes.  Cover the 12 quart, turn your stove on to medium temperature.  When the TempAlert Knob reads 90 C, turn your heat to 2 and set your timer for 50 – 60 minutes (depends on the size of potatoes you are using, the bigger the potatoes, the more time needed).  Text potatoes by sticking them with a knife.  The knife will easily go in without resistance when potatoes are done. In the Platinum Large Skillet place those veggies (without water of course) that your family likes and cover.  Turn your stove to medium and when the TempAlert Knob reads 80 C, turn to low and set you timer for 12-15 minutes.  The more color in your veggies the better.  Kids like color.  You might want to start the veggies about 30 minutes into the cooking of the potatoes so they are done at the same time. Once the potatoes are done, remove and slice off 1/3 of the potato (lying on its side) and scoop out the large portion of the potato, leaving about ¼ inch of potato in the peel.   Place your chopped veggie mixture into the potato and serve.  The 1/3 of the potato you cut offf, save,...

Zuddles

ZUDDLES ANYONE? In the past, you’ve needed to purchase a $50 spiralizer to create this wonderful taste treat. Now, use your Platinum Food Cutter and cone #2. Just hold a zucchini (the long way) against the cone and turn the handle. You’ve now created nice long spaghetti like pasta, Zuddles! Place your zuddles in your desired Platinum Pan, sprinkle with fresh garlic, cover, then set stove temperature at medium heat. When the TempAlert Knob reads 80 C, turn stove temp to low or off and cook for 10-12 minutes. Plate, then pour your favorite spaghetti sauce over the top and there you have it, a meal everyone will love. And, it’s gluten free! Grilling Plantain Bananas With No Oil!

PLANTAINS! What is that big banana? It looks really rugged, not very appetizing and over ripe. Displayed in the fruit area next to the regular bananas, why would anybody buy that old looking thing? Wow! What a Treat! We were introduced to the Plantain Banana by Q and Elvia A. They purchased the Platinum Cookware and just LOVE IT. They shared this recipe with us and I can’t get enough Plantains. They are sweet, firm and really, really good. The old way to prepare them was frying them in oil.  The new way…grilling them in the Platinum Grill Pan with no oil!. No More harmful deep fried oils clogging up the heart. It’s More Heart Healthy! Here are the grilling instructions: Plantains in the Platinum Grill Pan Healthy Solutions Plantains are ready to grill when they have turned dark brown. The yellow ones have not yet reached the sweetness we’re looking for. If you have purchased yellow looking plantains keep then on your kitchen counter until they have reached ripe perfection. Heat the grill pan on medium heat with the lid on. Open a fully ripe plantain by removing the peel and slice on the diagonal 1/2 cm thick slices. Lay out on the cutting board and spray each slice with a bit of coconut oil spray. When temperature reads 50C on the TempAlert Knob, place the slices, sprayed side down in the grill pan. Replace the lid and leave it 10 minutes. If the temperature hovers at 80 C that is perfect. If it starts to pass 80 remove the lid and turn the slices over. They should show some...

Mac and Squash

Ever want a healty version of Mac and Cheese, Well, here it is.  It’s even Gluten Free Mac and Squash Serves 4-6 Featured Platinum Cookware:  Platinum 4 Quart and 1.8 Quart 1/2 package Goldbaum’s Gluten Free Penne Rice Pasta 1/2 can Sprouts Organic Pumpkin 1/2 can Pacific Friend Coconut Milk 1/4 tsp Sprouts Organic Curry powder, salt free Bring 4 cups purified water to boil on medium heat in Platinum 4 qt.  Add pasta and stir.  Cover.  Set timer for 3, stir, cover, set for another 3 minutes.  Turn heat off.  Stir and cover.  Set timer for 15 minutes.  Drain. Sauce:  mix  the remaining ingredients in Platinum 1.8 qt.  Cover.  On medium-low heat bring the temperature to 30C.  Pour over drained pasta.  Mix gently.  Serve warm with a green salad. Simple Portabella Mushroom Pot Roast

Simple Portabella Mushroom Pot Roast                                          Healthy Solutions Serves 4 Start on medium heat, bring the grill pan to 60C.  Place cut mushrooms in pan, place lid on and keep heat at medium.  Turn over after 6 minutes; grill other side 5 minutes.  Remove the cooked mushrooms to a holding utility bowl, cover.  Repeat the process with remaining mushrooms.                           Ingredients: -24 oz. Portabella mushrooms.  I used the small size, cut in 1/2 inch thick slices, stems removed.  The large ones would work too. -large sweet onion, chopped in 1/2 inch size pieces -4 medium potatoes, scrubbed but not peeled, cut up #3 cone -4 medium carrots, scrubbed but not peeled, cut on wavy slicer #5 cone Sauté the onion in the grill pan after the mushrooms are removed still on medium heat until they soften and become transparent.  They should caramelize slightly, now combine the mushrooms with the onions in the grill pan.  Add the seasoning/seasonings of your choice.  I used 2 teaspoons of dry rosemary.  Now add the potatoes and then the carrots on top of the potatoes.  Garnish with a little more seasoning if you like.  Place lid on top, still on medium heat.  When temp reaches 80C again turn heat to 1 (just above low) and set timer for 30 minutes.  Temperature gauge should hover around 95C. Serve with a fresh green salad on “Meatless Monday” or anytime!  ...

Eggs Over Zoodles

Eggs Over Zoodles Featured Platinum Pan: 8” Gourmet Skillet w/Cover  (For more, use the Platinum Large Gourmet Skillet (11”) What an easy breakfast meal to prepare and it doesn’t take that long.  Prep time: 3 minutes. Our daughter cooked this up the other day and she said it was sooo good, she prepared it again the next day.  Here is her easy to follow recipe: Ingredients: 1/2 small zucchini (or the whole zucchini) 2 eggs minimum 1 tsp coconut oil Spiralize the  zucchini. Place in 8 inch skillet. Drizzle coconut oil over zoodles. Crack eggs over zoodles. Cover. Bring temp up to 60 and turn to off. Let cook 15 min for hard yolk. Grilled Potatoes in the Platinum Grill Pan

Grilled Potatoes in the Platinum Grill Pan Featured Platinum Pan: This is a great dinner or side dish anytime during the year with very little prep time. Preheat the Platinum Grill Pan to 50 Celsius on medium heat.  While the pan is heating, wash and scrub the potatoes, slice in half then place cut potatoes in a bowl of water for about 5 minutes.  Place potatoes (cut side down) on paper towels to dry.  Place potatoes face down in the Grill Pan, cover and set your timer for 35 minutes.  When done, the potatoes are perfectly grilled, soft insides but the grilled areas are crisp.  Call your family to the table and place your favorite topping on the potato or sprinkle olive oil on the cut side and add Spike or 21 Salute from Trader Joes. Explanation about the TempAlert being higher than 50 Celsius, When I was washing the potatoes I saw a Cottontail rabbit enjoying some fresh produce in my garden so I went out of chase it off and by the time I returned, the temperature was up to 70 Celsius.  It still worked fine, the potatoes were fabulous. Fresh Made Steak or Chicken Open Face Burrito Plates or Bowls

If you like to go out and eat, here is a way to eat at home and have a more healthy dinner.  At least you made it and you know what the ingredients were.   This is a great dinner or lunch! Fresh Made Steak or Chicken Open Face Burrito Plates or Bowls Featured Platinum Cookware:  Grill Pan, 4 Quart Pan w/Cover, and Platinum’s Marinating Kit with Platinum’s Small Utility Bowl (This is an awesome way to marinate meats or veggies, quickly). Ingredients 4 3-ounce steaks, boneless any cut sliced and cubed or 4 chicken breasts – sliced and cubed 5 cups fresh romaine lettuce, washed and chopped into small pieces 1 package Mexican blend cheese, shredded ½ cup sour cream (optional) Daisy brand is Gluten Free ½ cup thin sliced sweet onions ½ cup thin sliced green bell peppers ½ cup thin sliced red bell peppers ½ cup chopped tomatoes 1 cup black beans-rinsed (canned) ½ cup yellow corn (fresh or canned) 4-cups washed/rinsed basmati rice – See preparations below Lime Cilantro Quick Marinade – See preparations below 8-10 Uncooked Tortillas (from Costco – I like these, Tortilla Land) Lime Cilantro Quick Marinade  1 cup cilantro, lightly chopped Juice from 1 lime ¼ cup olive oil 3 cloves of garlic 1 jalapeno lightly chopped (for un-spicy remove the seed) 1 teaspoon kosher salt ½ teaspoon fine pepper Instructions Combine all the ingredients in a food processor for about one minute or until the texture is nice and thin. Stuffed Portabellas with Cheese and a Kale Salad

Talk about an AWESOME dish.  The mushroom become the main entree when it’s chock full of herbs, vegetables, and some cheese.  This is a must try! Featured Platinum Cookware:  Platinum Grill Pan and the  Platinum Large Gourmet Skillet Ingredients 5 cleaned and destemmed portabella mushrooms 1 1/2 cups cauliflower florets—chopped 1 3/4 cups broccoli florets—chopped 3/4 cup red onion, diced 3/4 cup carrots, diced 1/2 cup mozzarella cheese, shredded 1/4 cup tomato, diced 1 tbsp. fresh basil, chopped 3/4 cup bread crumbs 1/2 tsp. salt or to taste 1/2 tsp. granulated garlic or to taste Start heating the Platinum Grill Pan on medium heat with cover on Platinum Large Gourmet Skillet  –  Heated Place  the chopped cauliflower, broccoli, diced red onion, carrots, diced tomato’s and the fresh chopped basil in the heated gourmet skillet and sauté for 5-7 minutes. Platinum Grill Pan—Test pan by sprinkling a little water in the pan to make sure it is hot enough. Place mushrooms , fin side down in the grill pan, replace cover and let cook for 5 minutes.  Remover cover and turn mushrooms over and spoon contents from the skillet into the mushrooms. While mushrooms are cooking… Kale Mixture: Thinly slice about 1 and 1/2 half bunches of washed kale, add 3 TBSP of fresh lemon juice, 1 TBSP of EVOO and 1/4 tsp of finely chopped garlic.  Season to taste with salt and pepper.  You can do one of the following: sauté this mixture for about 3-4 minutes in the Large Gourmet Skillet or place in a mixing bowl, tosh and serve on the plate with the stuffed mushroom.
